Here’s everything you’ll need to make this Raisin Cake:

  • 250 g margarine
  • 450 g water
  • 300 g mixed raisins (golden and black)
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 400 g sugar
  • 400 g flour
  • 1 tsp baking soda
  • Zest of 1 orange
  • 2 tsp sesame seeds

Instructions:

  1. In a saucepan, add the margarine, water, raisins, cinnamon, nutmeg, cloves, and sugar.
  2. Bring the mixture to a gentle boil and simmer for 10 minutes.
  3. Remove from heat and let the mixture cool down.
  4. Preheat the oven to 170°C (340°F).
  5. Butter a rectangular pan (22×33 cm or 8×13 inches).
  6. Add the flour, baking soda, and orange zest to the cooled syrup mixture.
  7. Gently stir the mixture until combined, without overmixing.
  8. Pour the batter into the prepared pan and sprinkle sesame seeds on top.
  9. Bake for about 55 minutes.
  10. Let the cake cool completely before cutting into pieces.
  11. Optionally, dust lightly with powdered sugar once cooled.
