Recipe of the Day: Pumpkin Fritters

Pumpkins are in season and what better way to take advantage of their abundance than making these pumpkin fritters

Everything you’ll need to make pumpkin fritters

  • 500 g pumpkin, peeled and grated
  • 1 dry onion, grated
  • 4 spring onions, finely chopped
  • 2 tbsp fresh mint, finely chopped
  • 1 egg, beaten
  • 2 tbsp grated kefalotyri cheese
  • 3-4 tbsp breadcrumbs (or a little flour)
  • Salt and freshly ground pepper
  • Flour for coating
  • Olive oil for frying

Instructions

  1. Grate the pumpkin into a bowl.
  2. Add the grated dry onion, finely chopped spring onions, and chopped mint to the bowl.
  3. Add the beaten egg and the grated kefalotyri cheese.
  4. Mix the ingredients well until combined.
  5. Gradually add the breadcrumbs (or flour), mixing until the mixture becomes firm enough to shape into fritters.
  6. Season with salt and pepper to taste.
  7. Form the mixture into small fritters of your preferred size and lightly coat them with flour.
  8. Heat the olive oil in a frying pan.
  9. Fry the pumpkin fritters for about 2 minutes on each side until golden brown.
  10. Place the fritters on paper towels to absorb excess oil.
  11. Serve with a yogurt dip.
