Everything you’ll need to make pumpkin fritters
- 500 g pumpkin, peeled and grated
- 1 dry onion, grated
- 4 spring onions, finely chopped
- 2 tbsp fresh mint, finely chopped
- 1 egg, beaten
- 2 tbsp grated kefalotyri cheese
- 3-4 tbsp breadcrumbs (or a little flour)
- Salt and freshly ground pepper
- Flour for coating
- Olive oil for frying
Instructions
- Grate the pumpkin into a bowl.
- Add the grated dry onion, finely chopped spring onions, and chopped mint to the bowl.
- Add the beaten egg and the grated kefalotyri cheese.
- Mix the ingredients well until combined.
- Gradually add the breadcrumbs (or flour), mixing until the mixture becomes firm enough to shape into fritters.
- Season with salt and pepper to taste.
- Form the mixture into small fritters of your preferred size and lightly coat them with flour.
- Heat the olive oil in a frying pan.
- Fry the pumpkin fritters for about 2 minutes on each side until golden brown.
- Place the fritters on paper towels to absorb excess oil.
- Serve with a yogurt dip.
