Everything you’ll need to make these omelet muffins:
- 7 eggs
- 3 slices ham, finely chopped
- 1/2 cup spinach, finely chopped
- 10 cherry tomatoes, diced
- 1 spring onion, finely chopped
- 1/2 red bell pepper, diced
- 3 tbsp grated graviera cheese (or any other semi-hard cheese)
- Salt
- Pepper
- A bit of olive oil for greasing the muffin tin
Instructions
- In a bowl, whisk the eggs together until well combined, adding salt and pepper to taste.
- Finely chop all the vegetables, the ham, and the cheese into small pieces, then add them to the egg mixture and stir to combine.
- Lightly grease a muffin tin with six cups using a brush and divide the mixture evenly among the cups.
- Preheat the convection` oven to 170°C (340°F), and bake the omelet muffins in the center rack for 20 minutes, until they are set.
- Allow them to cool slightly, then remove from the muffin tin.
- Serve the omelet muffins with a side salad or, if packing them for a school snack, pair with whole grain crackers, cherry tomatoes, and some fruit like blueberries to complete the meal.
