Everything you’ll need to make these omelet muffins:

  • 7 eggs
  • 3 slices ham, finely chopped
  • 1/2 cup spinach, finely chopped
  • 10 cherry tomatoes, diced
  • 1 spring onion, finely chopped
  • 1/2 red bell pepper, diced
  • 3 tbsp grated graviera cheese (or any other semi-hard cheese)
  • Salt
  • Pepper
  • A bit of olive oil for greasing the muffin tin

Instructions

  1. In a bowl, whisk the eggs together until well combined, adding salt and pepper to taste.
  2. Finely chop all the vegetables, the ham, and the cheese into small pieces, then add them to the egg mixture and stir to combine.
  3. Lightly grease a muffin tin with six cups using a brush and divide the mixture evenly among the cups.
  4. Preheat the convection` oven to 170°C (340°F), and bake the omelet muffins in the center rack for 20 minutes, until they are set.
  5. Allow them to cool slightly, then remove from the muffin tin.
  6. Serve the omelet muffins with a side salad or, if packing them for a school snack, pair with whole grain crackers, cherry tomatoes, and some fruit like blueberries to complete the meal.
