Everything you’ll need Leek Rice
- 1/4 cup olive oil
- 7-8 medium, tender leeks
- 2 spring onions
- 1 small onion, finely chopped
- 1 small carrot, grated
- 2 cups Carolina or long-grain rice
- 5 cups warm water
- 2 tbsp fresh dill
- 1 lemon (juice)
- 2-3 tbsp olive oil (for finishing)
- Salt, freshly ground pepper
