Everything you’ll need to make these honey-glazed roasted carrots:

  • 700g carrots
  • 1 tbsp olive oil
  • 1 sprig of fresh rosemary or thyme
  • 1 orange, juice and zest
  • 1 tbsp mustard
  • 1 tsp honey

Instructions:

  1. Preheat your oven to 170°C (338°F).
  2. Peel the carrots and cut them lengthwise into large sticks. Alternatively, you can use whole baby carrots.
  3. Place the olive oil and butter to a small baking dish and heat in the oven for a few minutes until the butter melts.
  4. Add the carrots to the dish, along with the rosemary or thyme, and season with salt and pepper. Mix well, cover with aluminum foil, and roast for 30 minutes.
  5. In a small bowl, mix the honey, mustard, and orange juice. After the carrots have roasted for 30 minutes, remove the foil and pour the honey-mustard mixture over the carrots.
  6. Return the dish to the oven, uncovered, and continue roasting for another 20 minutes until the carrots are tender and caramelized.
  7. Finally, add the orange zest and squeeze some fresh orange juice over the carrots. Stir gently and serve.
