Everything you’ll need to make these honey-glazed roasted carrots:
- 700g carrots
- 1 tbsp olive oil
- 1 sprig of fresh rosemary or thyme
- 1 orange, juice and zest
- 1 tbsp mustard
- 1 tsp honey
Instructions:
- Preheat your oven to 170°C (338°F).
- Peel the carrots and cut them lengthwise into large sticks. Alternatively, you can use whole baby carrots.
- Place the olive oil and butter to a small baking dish and heat in the oven for a few minutes until the butter melts.
- Add the carrots to the dish, along with the rosemary or thyme, and season with salt and pepper. Mix well, cover with aluminum foil, and roast for 30 minutes.
- In a small bowl, mix the honey, mustard, and orange juice. After the carrots have roasted for 30 minutes, remove the foil and pour the honey-mustard mixture over the carrots.
- Return the dish to the oven, uncovered, and continue roasting for another 20 minutes until the carrots are tender and caramelized.
- Finally, add the orange zest and squeeze some fresh orange juice over the carrots. Stir gently and serve.
