Everything you’ll need to make this high-protein pasta
- 300g penne
- A little olive oil
- 10g butter
- 1 garlic clove
- 350g cherry tomatoes
- A bit of basil
- 200g Protein Cottage Cheese
- A little pasta water
- Salt
- Freshly ground pepper
Instructions
- Boil the penne in salted water, cooking it 2 minutes less than the time recommended on the package.
- Heat the olive oil in a deep pan and add the butter.
- Add the garlic, halved cherry tomatoes, and Florina pepper pieces to the pan.
- Season with salt, pepper, and add a sprig of basil. For a spicier taste, you can add a small hot pepper.
- Sauté for 5-6 minutes, until the tomatoes soften and start to break down.
- Place the sautéed ingredients in a blender, add the protein cottage cheese, and blend until smooth.
- Add a ladle of pasta water for extra moisture.
- Return the sauce to the pan, add the penne, and mix well.
- Cook for 1-2 more minutes, then add some finely chopped basil.
- Serve the high protein pasta immediately while still hot and saucy, as it can dry out quickly.
