Everything you’ll need for this Apple and Cinnamon Muffins Recipe:

  • 130 g all-purpose flour
  • 1 tsp baking powder
  • 100 g brown or dark sugar
  • 60 g melted and cooled butter
  • 100 g yogurt
  • 1 large egg
  • 1 apple, diced into small cubes
  • 1/2 tsp cinnamon
  • A few drops of lemon juice
  • 1/4 tsp baking soda
  • 1 pinch salt
  • A handful of almond flakes (for garnishing)

Instructions:

Prepare the Apples

  1. Peel and dice the apple into small cubes.
  2. Drizzle the apple pieces with lemon juice and sprinkle with cinnamon and 1 tbsp of the sugar.
  3. Toss to coat and set aside to marinate.

Prepare the Batter

  1. In a mixing bowl, combine the melted butter, sugar, yogurt, and egg. Whisk until smooth.
  2. Sift the flour, baking powder, baking soda, and salt into the wet ingredients.
  3. Gently fold the mixture with a spatula until just combined.
  4. Add the marinated apples, along with any juices, to the batter. Fold gently to incorporate.
  5. Line a muffin tin with 6 paper liners.
  6. Evenly distribute the batter among the liners.
  7. Sprinkle almond flakes on top for garnish.
  8. Preheat the convection oven to 170°C (340°F).
  9. Place the muffin tin on the middle rack of the oven.
  10. Bake for approximately 25 minutes, or until the muffins rise and the center is cooked through. Test by inserting a toothpick into the center—if it comes out clean, they’re ready.
  11. Let the muffins cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely.
