Everything you’ll need for this Apple and Cinnamon Muffins Recipe:
- 130 g all-purpose flour
- 1 tsp baking powder
- 100 g brown or dark sugar
- 60 g melted and cooled butter
- 100 g yogurt
- 1 large egg
- 1 apple, diced into small cubes
- 1/2 tsp cinnamon
- A few drops of lemon juice
- 1/4 tsp baking soda
- 1 pinch salt
- A handful of almond flakes (for garnishing)
Instructions:
Prepare the Apples
- Peel and dice the apple into small cubes.
- Drizzle the apple pieces with lemon juice and sprinkle with cinnamon and 1 tbsp of the sugar.
- Toss to coat and set aside to marinate.
Prepare the Batter
- In a mixing bowl, combine the melted butter, sugar, yogurt, and egg. Whisk until smooth.
- Sift the flour, baking powder, baking soda, and salt into the wet ingredients.
- Gently fold the mixture with a spatula until just combined.
- Add the marinated apples, along with any juices, to the batter. Fold gently to incorporate.
- Line a muffin tin with 6 paper liners.
- Evenly distribute the batter among the liners.
- Sprinkle almond flakes on top for garnish.
- Preheat the convection oven to 170°C (340°F).
- Place the muffin tin on the middle rack of the oven.
- Bake for approximately 25 minutes, or until the muffins rise and the center is cooked through. Test by inserting a toothpick into the center—if it comes out clean, they’re ready.
- Let the muffins cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely.
