Ingredients
- 1½ kg potatoes, peeled & cut into wedges
- ⅓ cup olive oil
- 1 tbsp tomato paste
- 1 tbsp sweet paprika
- 1 large tomato, cut into chunks
- 1 onion, thinly sliced
- 1 whole garlic bulb, halved
- 4 sprigs fresh oregano
- 4 sprigs fresh thyme
- 1 cup water
- Salt & pepper, to taste
- 150g firm feta, crumbled
Instructions
1. Prepare the Potatoes
- Preheat oven to 180°C (350°F).
- Place potato wedges in a large baking dish.
- Add olive oil, tomato paste, paprika, tomato chunks, onion slices, salt, and pepper.
- Mix well to coat the potatoes evenly.
2. Bake the Potatoes
- Place the halved garlic bulb (cut side up) into the dish.
- Scatter the oregano and thyme over the potatoes.
- Pour 1 cup of water into the pan.
- Bake for 1 hour 20 minutes, stirring gently every 30 minutes.
- If needed, add a bit of warm water to prevent drying out.
3. Finish with Feta
- Once the potatoes are tender and have absorbed the flavors, sprinkle the crumbled feta on top.
- Return to the oven for a few more minutes, until the feta starts to brown slightly.
4. Serve & Enjoy!
- Serve hot as a side dish to grilled meats or enjoy as a main vegetarian dish!
