Everything you’ll need to make Chicken souvlaki
- 3 pieces of chicken breast fillet
- Rosemary sprigs
For the marinade:
- 2 onions
- 2 tomatoes
- 2 tbsp chopped parsley
- 1 tbsp chopped mint
- 2 tbsp olive oil
- 2 tbsp yogurt
- 1 tbsp balsamic vinegar
- Salt
- Pepper
Instructions:
- Blend the onions, tomatoes, and herbs in a blender until smooth. Then add the olive oil, yogurt, and vinegar, and mix well.
- Cut the chicken into small cubes and place them in a bowl.
- Season with salt and pepper, and pour the marinade over the chicken.
- Let it marinate in the fridge for at least 2 hours (12 hours is ideal).
- Strip the rosemary sprigs halfway and skewer 2-3 pieces of chicken on each. Grill the skewers for about 5 minutes on each side to keep them juicy.
- Serve with a green salad.
