Everything you’ll need to make Chicken souvlaki
  • 3 pieces of chicken breast fillet
  • Rosemary sprigs

For the marinade:

  • 2 onions
  • 2 tomatoes
  • 2 tbsp chopped parsley
  • 1 tbsp chopped mint
  • 2 tbsp olive oil
  • 2 tbsp yogurt
  • 1 tbsp balsamic vinegar
  • Salt
  • Pepper

Instructions:

  1. Blend the onions, tomatoes, and herbs in a blender until smooth. Then add the olive oil, yogurt, and vinegar, and mix well.
  2. Cut the chicken into small cubes and place them in a bowl.
  3. Season with salt and pepper, and pour the marinade over the chicken.
  4. Let it marinate in the fridge for at least 2 hours (12 hours is ideal).
  5. Strip the rosemary sprigs halfway and skewer 2-3 pieces of chicken on each. Grill the skewers for about 5 minutes on each side to keep them juicy.
  6. Serve with a green salad.
