Everything you’ll need to make this Savory Cake
- 250 g mixed mushrooms, sliced
- A few sprigs of fresh thyme
- 50 g olive oil
- 50 g butter (melted)
- 2 eggs
- 200 g strained yogurt
- 150 g grated yellow cheeses
- 100 g smoked ham (or any other deli meat or cheese)
- 1 pinch of nutmeg
- 250 g self-rising flour
- Salt and pepper to taste
Instructions
- Heat a large skillet over high heat.
- Once hot, add 2 tbsp olive oil and immediately add the mushrooms.
- Cook without stirring for 2–3 minutes until the mushrooms are completely dry.
- Sprinkle with fresh thyme and set aside to cool.
- Preheat the convection oven to 170°C.
- Butter and flour a rectangular loaf pan.
- In a mixing bowl, whisk together the eggs, yogurt, nutmeg, salt, and pepper.
- Add the remaining olive oil and melted butter, mixing well.
- Add the cooled mushrooms, grated cheeses, and diced ham to the batter.
- Sift in the self-rising flour and fold the mixture gently with a spatula until combined.
- Pour the batter into the prepared pan.
- Bake on the middle rack for approximately 45 minutes, or until the cake is risen, golden brown, and pulling away from the edges of the pan.
- Let the cake cool for 15 minutes before removing it from the pan.
